Feeding and Breeding of the Iberian Pig

Acorn: Iberian pigs raised in freedom and fed in montanera, a mix between acorns and grasses.

Field Bait: animals fed with the available natural resources, usually grass, olives and chestnuts. Also raised in freedom.

Bait: Intensively raised on farms and fed through feed.

These distinctions are essential to better understand the quality of the final product. As you probably know, each type of breeding with its subsequent feeding generates a final product with generally different prices, flavors and quality.

Racial Percentage and Weights of the Iberian Pig

It is determined by the genetics of the animal in question.

An Iberian 100% pig: He has fathers and mothers of that same origin. It preserves the racial and distinctive purity of the pig of our country.

The 75% Iberian pig: The mother is usually 100% Iberian, while the father has a 50% Iberian breed.

50% Iberian Breed: It is obtained with a totally Iberian mother and a non-Iberian father. Currently, the Duroc breed is widely used for this cross.

This regulation also establishes minimum weights and times to comply with, both in the necessary weight of the animal to be slaughtered, as well as the drying time and final weight required for the sale of each type of piece –24 months and 7KG for hams and 12 months and 4KG for pallets.
